Currently the Stripe interface is not user-friendly when there are many payment methods. It would be better if we could indicate that the payment methods are shown on a maximum number of rows (e.g. 2 or 3 or 4) - I personally think more rows is much more insightful than the current way

I definitely see your point. We have limited capability here, as this comes in from Stripe — we're using the Stripe Element. That said, they do have an "accordion" layout type (which you can play with in the link above) that displays the payment method options differently.
I'll leave this open as a feature request to add an option for folks to change the layout.

Jason Adams: Stripe also offers an option where donors are taken offsite to a Stripe payment module right? Are you considering to give us as admins the choice if we want to use Stripe Elements or their offsite checkout version? Usually the offsite checkout looks very smooth and professional, so it might be nice to have the choice as admins.

Rik: You must be referring to Stripe Checkout. It's certainly something worth considering. If it's a feature you'd like I'd suggest adding it to the Feature Request board so we can start to gather interest on the feature. It doesn't really have anything to do with the new Stripe Elements gateway coming out with 3.0, though, and would be an entirely new Stripe gateway.

Something like this would be better, or a combination with the 4 options of stripe in a row but then with multiple rows
